Growers Ark Wild Salad foraging in the Scottish Highlands - Living in a Hiace Camper Van

Over the past while I've had the good fortune to become friends with Andy Cox and his partner Jessie, who together run an organic permaculture project called 'Growers Ark' located in the Scottish Highlands. I've been staying with them recently, helping out on the land, and with the admin side of things. It was an amazing time staying there in the beautiful and peaceful surroundings, living simply form the land.

Andy describes some of the herbs growing wild nearby..

Being there also gave me the opportunity to learn from Andy, who is very knowledgeable on the subjects of wild plants for survival, and organic permaculture, as well as different forms of native spirituality. During my visit we had time to record a few videos on the herbs, and a great one on preparing the salad from the ingredients.

These salads are not only fresh and beautiful to look at but are incredibly tasty and leave you with a real sense of well-being hours after eating them. Its no wonder that grazing animals are able to live so well in the fields - I never thought about it before, but its not just grass they are eating, but all these nutritious herbs and plants. This is something I'll be taking with me on my forward journey, and I am already watching the verges and hedgerows for what I now know I can make a meal from.
